Ingredient List
- 1 large orange-fleshed sweet potato, peeled (about 1 lb)
- 1 tablespoon cornstarch
- 1 tablespoon vegetable oil
- 1 tablespoon from 1 container (6.25 oz) Old El Paso™ Original Taco Seasoning Mix
- 3/4 cup shredded Cheddar cheese (3 oz)
- 1 medium avocado, pitted, peeled and diced
- 1 tablespoon finely chopped red onion
- 2 teaspoons fresh lime juice
- 2 tablespoons chopped fresh cilantro leaves
- 1/4 teaspoon salt
- 18 thin slices fresh jalapeño chiles
- 2 tablespoons roasted pepitas
Preparation
- Heat oven to 425°F. Line 18x13-inch rimmed pan with foil; spray with cooking spray.
- Cut sweet potato crosswise into 1/4-inch slices (about 16). In medium bowl, toss potatoes with cornstarch until completely coated. Drizzle with oil; stir to coat. Sprinkle with taco seasoning mix; place in single layer on pan.
- Bake 15 minutes; turn, bake 10 to 15 minutes longer or until browned. Remove from oven; top each slice with Cheddar cheese. Return to oven 1 to 2 minutes or until cheese is melted.
- Meanwhile, in small bowl, coarsely mash avocado with fork; stir to chunky texture. Add red onion, lime juice, cilantro and salt; stir to combine.
- To serve, top each potato slice with slightly less than a tablespoon guacamole; garnish with jalapeño chile and pepitas.
Expert Tips
- Sweet potatoes vary in size and shape. The number of slices could vary, but the guacamole topping should not have to be adjusted.
- Craving even more toppings? Try a little sour cream or fresh cilantro.
- To dice the avocado, cut it in half and remove the pit. Using a large spoon, scoop the flesh from the skin. Place one avocado half cut-side down on a cutting board. Make two horizontal cuts to make three planks, then cut the planks lengthwise into strips. Turn 90 degrees, and cut again. Repeat with the other avocado half.
- Roasted pepitas can be found at most grocery stores. Look for them near the nuts.
